Paulie's Market: 'The best quality at a cheaper price'

Cara and Paul Swisher's college degrees don't lend themselves to the restaurant business.

However, that didn't stop the Snyder residents from opening their own restaurant, Paulie's Market, at 3555 Sheridan Drive at Ivyhurst Road.

"I have a degree in math, and he's criminal justice," Cara laughed. "It was just something we wanted to do."

Not just a restaurant, the business is also a full-service deli that sells all meats by the pound.

The Swishers are especially proud of their roast beef, which they slow roast every morning.

"We spent a while trying out different cuts of meat until we found the perfect one," Paul said. "We want to focus on quality."

With the exception of the roast beef, the rest of the meats at Paulie's Market are Boar's Head. In addition, the Swishers import cheeses and olive oils.

"We want to provide the best quality at a cheaper price," Paul said. "We try to do everything in-house, including making our own salad dressings and soups."

Side dishes, such as macaroni and potato salad, are also made in-house by the Swishers. There is a decided lack of fried food in order to present healthier options for the restaurant's patrons.

In addition to the restaurant and deli, Paulie's Market is also a catering business, complete with cookie and canoli trays with homemade cookies made by Cara's grandmother.

Since opening in April 2007, business has been good for the Swishers, who were married a year in September.

"The businesses around here have been very loyal," said Paul. "We probably deliver up at Northtown Toyota three times a day."

As far as the future goes, though, the Swishers are looking forward to growing in their current location.

"We hope to have more business with UB," Cara said.

The couple noted that they will remain committed to the quality of their food for what they hope will be a growing customer base.

"We don't eat at chain restaurants; it's all local," Paul said. "We just want to be the local corner store."

"Once you have the Boar's Head, you don't go back," Cara added.
