Setzer hosts cooking classes at Premier Gourmet

David Setzer of Snyder will conduct a series of cooking classes with tips and skills professional chefs use in their kitchens to make projects easier and less time consuming.

Instead of focusing on recipes, these classes teach techniques based on the James Beard cookbook, "The Theory and Practice of Good Cooking." Participants will learn how to identify the flavor of components of foods, and how they combine to balance the final taste of a dish.

Setzer, co-founder of the Buffalo chapter of Slow Food, an international organization that promotes sustainable food production, local food traditions and the preservation of food varieties, has trained with a master chef. He is also an advocate for area farmers and quality food producers and has spent time at various local restaurants.

Each session will include a discussion of ingredients and equipment as well as techniques. Classes, which began Tuesday, Sept. 12 are also held on Sept. 19 and 26 and Oct. 3, 10, 17 and 24.

Classes will be held in the Premier Café, 3465 Delaware Ave. Kenmore, from 6:30 to 8 p.m. Classes are limited to 20 persons and require advance registration. The cost is $25 per session, with individual sessions depending on class-size availability.
